This light and airy cake uses sprouted wheat flour for added nutrients, while the natural sweetness of peaches brings a fresh, fruity twist. It's a simple yet satisfying treat, perfect for a wholesome dessert.
Ingredients:
1/3 cup sprouted wheat flour
2 eggs, separated
1/3 cup evaporated cane sugar (or sweetener of choice)
1/4 cup mashed peaches (or other fruit)
Dash of salt
1 Tablespoon oil
Instructions:
Preheat oven to 350°F (175°C).
Separate the egg whites and yolks into two bowls.
Add the sweetener to the yolks and beat until light and creamy.
Gently fold in the flour, salt, and mashed peaches.
Beat the egg whites until soft peaks form (they should stand firm with a slight curl when the beaters are lifted).
Fold the egg whites into the yolk mixture by gently scraping the bottom of the bowl and folding over the top until fully incorporated. Be careful not to overmix.
Grease a small (preferably glass) baking dish with olive oil or tallow.
Pour the batter into the dish, smooth the top, and bake for 25-30 minutes, or until the top is lightly browned and a toothpick comes out clean.
